These salads made 6 different ways are fresh, flavorful, and perfect for mixing things up all week long—no sad lunches here!
Ingredients
Asian Cucumber
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon honey
1 tablespoon sesame oil
1 teaspoon red pepper flakes
1 tablespoon minced garlic, I used store-bought
1 tablespoon sesame seeds
¼ teaspoon salt, add more to taste depending on how salty the soy sauce is
3 medium cucumbers, thinly sliced (I used English cucumbers)
2 to 3 tablespoons chopped roasted peanuts
3 green onions, thinly sliced for garnish
Broccoli Cauliflower
1 cup mayonnaise
1 cup sour cream
1 ounces ranch dressing mix, dry
1 head broccoli, washed and cut into small pieces
1 head cauliflower, washed and cut into small pieces
½ small red onion, diced
1 package bacon, cooked and chopped
6 ounces Colby Jack cheese cubes, cut into small cubes
Broccoli
Salad
6 cups broccoli florets, broken into bite-size pieces
1½ cups shredded sharp cheddar cheese
⅔ cup chopped craisins
⅔ cup diced red onion
⅔ cup cooked and crumbled bacon
½ cup sunflower kernels
Dressing
1¼ cups mayonnaise
½ cup sour cream
4 tablespoons apple cider vinegar
2 tablespoons granulated sugar
1 teaspoon kosher salt
½ teaspoon fresh cracked black pepper
Spinach Strawberry
5 ounces fresh baby spinach, rinsed and patted dry
1 cup candied pecans
1 quart strawberries, rinsed, dried, and halved or quartered, stems removed
1 cup fresh blueberries, rinsed
2 avocados, diced
½ cup feta cheese, crumbled
½ cup vinaigrette, more or less to taste
Tomato Cucumber
Dressing
⅓ cup olive oil, extra virgin
3 tablespoons red wine vinegar
1 tablespoon fresh thyme
2 teaspoons flat parsley, chopped fresh
2 teaspoons garlic, fresh minced
2 teaspoons balsamic vinegar
1 tablespoon honey
1 teaspoon Italian seasoning
1 teaspoon kosher salt
1 teaspoon fresh cracked black pepper
Salad
6 medium vine ripe tomatoes
1 English cucumber, peeled or unpeeled
½ cup red onion, thinly sliced
7 Layer
For the Salad
1 small head iceberg lettuce rinsed, dried, and chopped (about 5 cups)
1 cup red onion, chopped (about 1 small)
2 cups green pepper, chopped (about 3 medium)
1 ½ cups Roma tomatoes, chopped and diced (about 3 medium)
6 large hard-boiled eggs, chopped into 8 pieces each
1 cup frozen peas, thawed and divided
1 cup shredded cheddar cheese
6 to 8 slices bacon, cooked and crumbled
For the Dressing
2 cups mayonnaise
2 tablespoons granulated sugar
