CHICKEN WITH PARMESAN RICE AND GARLIC CREAM 🍗🍚
📋 Ingredients:
For the garlic Parmesan rice:
1 cup whole grain white rice Long chicken strips
2 cups chicken broth
2 tablespoons unsalted butter
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
👩 🍳 Directions:
1️⃣ In a shallow bowl, combine flour, garlic powder, Italian seasoning, salt, and black pepper. Coat the chicken strips evenly in the seasoned flour.
2️⃣ Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the chicken and cook until golden brown and cooked through, about 6-8 minutes per side. Remove from the skillet and set aside.
3️⃣ In the same skillet, melt the remaining tablespoon of butter and sauté the minced garlic for 30 seconds until softened. which it flavors.
4️⃣ Add the chicken broth and lemon juice, scraping up any browned bits from the pan. Bring to a simmer for 2-3 minutes.
5️⃣ Stir in Parmesan cheese and crushed red pepper flakes (if using). Add the chicken to the pan and coat it in the sauce. Simmer for another 2-3 minutes until the sauce thickens slightly.
6️⃣ In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
8️⃣ Pour in the chicken broth, salt, and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes. or until the rice is
9️⃣ Stir in grated Parmesan cheese until creamy and smooth.
🔟 Spoon the creamy garlic and Parmesan rice onto plates and top with the chicken. Drizzle with the garlic butter sauce from the pan and garnish with fresh parsley.
