Southern Sausage Biscuits
Ingredients
2 cups all-purpose flour
1 tbsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, cold and cubed
¾ cup buttermilk
8 breakfast sausage links (or patties, cooked)
Optional: honey or maple syrup for serving
Instructions
Prepare the Biscuit Dough
In a large bowl, whisk together flour, baking powder, baking soda, and salt.
Cut in the cold butter until mixture resembles coarse crumbs.
Stir in buttermilk just until a soft dough forms.
Shape the Biscuits
On a lightly floured surface, roll out the dough to about ½-inch thickness.
Cut into rectangles or rounds large enough to wrap each sausage.
Assemble
Place a cooked sausage on each biscuit piece and wrap the dough around it, pinching edges to seal.
Bake
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Place wrapped sausages seam-side down and bake 15–18 minutes, until golden brown.
Serve
Enjoy warm, plain or with a drizzle of honey or maple syrup.
