🧺 Ingredients:
Chicken
2 chicken thighs (or leg quarters) 🍗
2 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
½ tsp black pepper
Salt to taste
Rice
1 cup white rice 🍚
2 cups water
Salt
Sides
Mashed potatoes 🥔
Mashed sweet potato 🎃
Sautéed greens (spinach or mixed veg) 🥬
Pickled beetroot (optional)
Parsley for garnish 🌿
👩🍳 Method:
Chicken:
Mix olive oil, paprika, garlic powder, salt, and pepper.
Rub chicken well and roast at 200°C (390°F) for 40–45 min until golden and juicy.
Rice:
Rinse rice, cook with water and salt until fluffy.
Shape into a dome for serving.
Sides:
Boil potatoes & sweet potatoes separately, mash with a little salt and butter.
Sauté greens with olive oil and garlic for 2–3 minutes.
Serve:
Plate rice, chicken, and sides neatly.
Garnish rice with parsley.
