Ingredients
1 cup cottage cheese (small curd works best)
1 cup rolled oats (or oat flour for smoother texture)
½ cup vanilla protein powder
Zest of 1 lemon
2 tbsp fresh lemon juice
2–3 tbsp honey or maple syrup (to taste)
½ tsp vanilla extract
½ tsp baking powder
Pinch of salt
½ cup blueberries (fresh or frozen)
Instructions
Blend cottage cheese until smooth (this keeps the bites creamy).
In a bowl, mix blended cottage cheese, oats, protein powder, lemon zest, lemon juice, sweetener, vanilla, baking powder, and salt.
Gently fold in blueberries.
Scoop into mini muffin tins or roll into bite-sized balls.
Bake at 350°F (175°C) for 12–15 minutes
