1 lb (450 g) boneless, skinless chicken breasts
1 small onion, diced
2 cloves garlic, minced
1–2 cans (10–12 oz) green enchilada sauce
1 cup chicken broth
1 cup salsa verde
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon smoked paprika (optional)
Salt and pepper to taste
1 cup shredded cheese (cheddar or Mexican blend)
½ cup sour cream or Greek yogurt (optional, for extra creaminess)
Fresh cilantro, chopped, for garnish
Sliced avocado, for topping

1️⃣ Prep the crock pot
