The Ingredients
​This salad is a vibrant mix of textures and flavors, perfect as a light meal or a refreshing side.
​For the Salad
​5 oz (approx. 140g) Mixed greens (spinach, spring mix, or baby kale work beautifully)
​1 Ripe avocado, diced
​1 cup Cherry tomatoes, halved
​½ Red onion, thinly sliced
​½ cup Cucumber, diced
​¼ cup Feta cheese, crumbled (optional)
​¼ cup Toasted walnuts or pecans, roughly chopped
​2 tbsp Fresh parsley or cilantro, chopped (for garnish)
​For the Zesty Lemon-Herb Vinaigrette
​3 tbsp Extra virgin olive oil
​1 ½ tbsp Fresh lemon juice
​1 tsp Dijon mustard
​½ tsp Dried oregano or mixed Italian herbs
​¼ tsp Garlic powder (or 1 small clove minced fresh garlic)
​Salt and freshly ground black pepper to taste
​The Method
​1. Prepare the Vinaigrette
​In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, dried herbs, and garlic powder. Season with salt and pepper to taste. Set aside.
​2. Assemble the Salad
​In a large salad bowl, combine the mixed greens, diced avocado, halved cherry tomatoes, sliced red onion, and diced cucumber.
​3. Dress and Garnish
​Pour the prepared vinaigrette over the salad ingredients. Toss gently to ensure all the greens and vegetables are lightly coated.
​4. Final Touches
​Sprinkle the crumbled feta cheese (if using) and toasted walnuts or pecans over the top. Garnish with fresh parsley or cilantro.
