The Emerald Jewel Salad: A Burst of Freshness!
The Ingredients
This salad is a vibrant mix of textures and flavors, perfect as a light meal or a refreshing side.
For the Salad
5 oz (approx. 140g) Mixed greens (spinach, spring mix, or baby kale work beautifully)
1 Ripe avocado, diced
1 cup Cherry tomatoes, halved
½ Red onion, thinly sliced
½ cup Cucumber, diced
¼ cup Feta cheese, crumbled (optional)
¼ cup Toasted walnuts or pecans, roughly chopped
2 tbsp Fresh parsley or cilantro, chopped (for garnish)
For the Zesty Lemon-Herb Vinaigrette
3 tbsp Extra virgin olive oil
1 ½ tbsp Fresh lemon juice
1 tsp Dijon mustard
½ tsp Dried oregano or mixed Italian herbs
¼ tsp Garlic powder (or 1 small clove minced fresh garlic)
Salt and freshly ground black pepper to taste
The Method
1. Prepare the Vinaigrette
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, dried herbs, and garlic powder. Season with salt and pepper to taste. Set aside.
2. Assemble the Salad
In a large salad bowl, combine the mixed greens, diced avocado, halved cherry tomatoes, sliced red onion, and diced cucumber.
3. Dress and Garnish
Pour the prepared vinaigrette over the salad ingredients. Toss gently to ensure all the greens and vegetables are lightly coated.
4. Final Touches
Sprinkle the crumbled feta cheese (if using) and toasted walnuts or pecans over the top. Garnish with fresh parsley or cilantro.
