The Ingredients
​To make a truly “excellent” pizza, quality is everything. Here is what you will need for 2 medium pizzas:
​For the Dough
​300g Type 00 Flour (The gold standard for pizza)
​200ml Lukewarm water
​7g Sea salt
​3g Active dry yeast
​For the Toppings
​San Marzano canned tomatoes (crushed by hand)
​Fresh Buffalo Mozzarella (torn into pieces)
​Fresh Basil leaves
​Extra Virgin Olive Oil
​The Method
​1. Prepare the Dough
​Mix the flour, yeast, and water in a bowl. Add the salt last. Knead the dough for about 10 minutes until it is smooth and elastic. Cover it with a damp cloth and let it rise for at least 2 hours (or 24 hours in the fridge for maximum flavor).
​2. The “Blast Heat” Technique
​Standard ovens don’t get as hot as pizza ovens. To fix this, place a baking stone or an inverted baking tray in your oven and crank it to its maximum setting (250°C to 300°C). Let it preheat for at least 45 minutes.
