Slow-Cooker Meatloaf with Mushroom Gravy
Ingredients:
1 1/2 pounds ground beef or a mix of beef and pork
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
Salt and pepper, to taste
For the Mushroom Gravy:
1 cup mushrooms, sliced (button or cremini)
1 cup beef broth
1 tablespoon cornstarch
1/4 cup water
1 tablespoon Worcestershire sauce
Salt and pepper, to taste
Prepare the Meatloaf: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, and parsley. Mix until just combined.
Shape and Cook: Shape the meat mixture into a loaf and place it into the slow cooker. Pour the mushroom and beef broth mixture around the meatloaf.
Slow Cook: Cover and cook on low for 6-7 hours, or until the meatloaf is cooked through and tender.
Transfer: Remove the meatloaf from the slow cooker and transfer it to a serving platter.
Make the Gravy: In a small bowl, mix the cornstarch and water to form a slurry. Stir this into the cooking liquid in the slow cooker. Turn to high and cook for 5-10 minutes until the gravy thickens.
Serve: Slice the meatloaf, pour the mushroom gravy over the top, and serve warm.
