A bold Southwestern-style stew with tender beef, soft potatoes, and savory green chiles

🧾 Ingredients
2 pounds beef chuck (cut into large chunks)
2 tablespoons oil (vegetable or avocado)
Salt & black pepper, to taste
1 large onion, diced
4 cloves garlic, minced
2 tablespoons flour (optional, for thickening)
2 cups roasted green chiles (Hatch or Anaheim, peeled & chopped)
4 cups beef broth (low sodium preferred)
1 teaspoon ground cumin
1 teaspoon dried oregano (Mexican oregano if possible)
½ teaspoon smoked paprika
1–2 pounds potatoes (Yukon gold or russet), peeled & diced
1 bay leaf
Optional:
½ teaspoon chili powder (for more heat)
Splash of lime juice (for finishing)
Fresh cilantro, chopped (for garnish)
🔥 Instructions
Brown the Beef
Heat oil in a large Dutch oven or heavy pot over medium-high heat.
Season beef generously with salt and pepper.
Brown in batches until deeply seared on all sides. Remove and set aside.
Build the Base
In the same pot, add diced onion and cook 4–5 minutes until soft.
Add garlic and cook 30 seconds until fragrant.
Sprinkle in flour (if using) and stir for 1 minute.
Simmer the Stew
Return beef to the pot.
Add green chiles, beef broth, cumin, oregano, smoked paprika, bay leaf, and chili powder (if using).
Bring to a gentle boil, then reduce to low, cover, and simmer 2 hours, stirring occasionally.
Add Potatoes
Stir in diced potatoes.
Simmer uncovered for 30–45 minutes, until potatoes are tender and beef is falling apart.
Shred & Finish
Remove bay leaf.
Lightly shred beef with two forks if desired.
Adjust salt, pepper, and add a splash of lime juice.

🐢 Slow Cooker Option
After browning beef and onions, transfer everything (except potatoes) to a slow cooker.
Cook on LOW 8 hours or HIGH 4–5 hours
Add potatoes during the last 1½–2 hours
