The Ultimate Neapolitan-Style Pizza: The Golden Crust Secret
The Ingredients
To make a truly “excellent” pizza, quality is everything. Here is what you will need for 2 medium pizzas:
For the Dough
300g Type 00 Flour (The gold standard for pizza)
200ml Lukewarm water
7g Sea salt
3g Active dry yeast
For the Toppings
San Marzano canned tomatoes (crushed by hand)
Fresh Buffalo Mozzarella (torn into pieces)
Fresh Basil leaves
Extra Virgin Olive Oil
The Method
1. Prepare the Dough
Mix the flour, yeast, and water in a bowl. Add the salt last. Knead the dough for about 10 minutes until it is smooth and elastic. Cover it with a damp cloth and let it rise for at least 2 hours (or 24 hours in the fridge for maximum flavor).
2. The “Blast Heat” Technique
Standard ovens don’t get as hot as pizza ovens. To fix this, place a baking stone or an inverted baking tray in your oven and crank it to its maximum setting (250°C to 300°C). Let it preheat for at least 45 minutes.
3. Shape and Dress
Stretch the dough by hand—avoid a rolling pin to keep the air in the crust! Spread a thin layer of tomato sauce, add your mozzarella, and a drizzle of olive oil.
4. The Bake
Slide the pizza onto the hot stone. Bake for 5–8 minutes until the crust is golden and charred in spots, and the cheese is bubbling
